{Two Ingredient} Sweet Potato Pancakes

These simple two ingredient pancakes are SO delicious and make the perfect accompaniment to a family Saturday morning with coffee and snuggles :) We will typically have some leftover sweet potatoes from the week and either make them into pancakes or use it to make a sweet potato, goat cheese, and greens pizza!
Ingrediens:
1 cup mashed sweet potato
4 eggs
oil or butter for cooking
Optional Seasonings
1¾ teaspoon ground cinnamon
pinch of ground ginger, allspice, and salt
Optional Toppings
Peanut butter
Maple Syrup
Coconut Whipped Cream
Directions
Whisk together the sweet potato and eggs. You can also put it in the food processor for a smooth texture. Add seasonings, if desired, and stir. Heat oil or butter over medium-low heat.
Drop the sweet potato mixture on the hot skillet and cook for 3-5 minutes.
Flip each pancake and cook for an additional 3-5 minutes, until lightly golden brown on the outside and cooked through. (Lower heat works better, and don't try to flip them before totally cooked on one side or they will fall apart)
