Apple No- Bake Cookies

These healthy no- bake cookies are the perfect delicious snack. They are easy to make and come together quickly for a spur-of -the-moment snack without added sugar. They are also made from a whole grain (oats) so it is a snack you can feel good about.
Serves: 16
Ingredients
1 tablespoon coconut oil
6 dates put through the food processor
2 tablespoons creamy peanut butter
5 tablespoons unsweetened applesauce
½ tablespoon pure vanilla extract
¼ teaspoon ground cinnamon
A pinch of salt
1 cup rolled oats
Instructions
Prepare a small baking sheet with a piece of parchment paper. Set aside.
In a large saucepan over medium-high heat, melt the coconut oil.
Add the peanut butter and the apple sauce. Stir until combined and melted through.
Remove from the heat, and add the pureed dates, vanilla extract, cinnamon, salt and oats.
Using a 1-inch cookie scoop, scoop the cookies into the prepared baking sheet.
Cool in the refrigerator for at least an hour, then enjoy!
