Coconut & Cacao Energy Bars

These simple and delicious energy bars are easy to make and a great "grab & go" snack. My good friend Bobbi from Nhershoes Fitness shared a homemade cliff bar recipe a few years ago and I fell in love! I have taken that recipe and slightly altered it to make these delicious energy bars with coconut and cocoa nibs. You can easily alter the recipe to include your favorite add ins.

Ingredients: 1 cup old fashioned oats 3 large biscuit style shredded wheat cereal 1 cup raisins 1/2 tsp cinnamon 1/2 tsp salt 2 eggs 1/4 cup maple syrup 2 tsp vanilla 1/4 cup peanut butter 1/2 cup cocoa nibs

1/4-1/2 cup shredded unsweetened coconut

Directions:

  1. Preheat oven to 350°

  2. Line an 8×8 pan with parchment paper.

  3. Place raisins in food processor and pulse until lightly chopped (it will be sticky)

  4. Add the shredded wheat, oats, cinnamon and salt in food processor and pulse until mixture is finely chopped and incorporated.

  5. In a large bowl whisk together eggs, maple syrup, vanilla and peanut butter.

  6. Add the dry and wet ingredients together.

  7. Fold in the coco and coconut until combined.

  8. Spread in prepared pan and bake 15-18 minutes

*Make sure you let it cool before you slice them into squares
