These simple and delicious 2 ingredient scones can be easily altered to fit your preferences. They are also diary free :) 

Some add ins that our family enjoys are:

Lemon zest and blueberries

Raisins and Cinnamon

Raspberry and Lemon

Dates and walnuts 

You can also leave them plain and eat them with honey and peanut butter after baking 


  • 2 cups fresh Self-Rising Flour, plus 1 to 2 Tablespoons of additional flour if necessary

  • 1 1/2 cups canned room temperature, stirred, Coconut Milk

*If you don't have self rising flour, all you need to do is mix 2 cups of fresh flour (I use Bob's Red Mill stone ground wheat) with 2 tsp of baking powder, and 1/2 tsp of salt 


  1. Preheat the oven to 425 degrees F.

  2. In a medium bowl, mix flour and any additional stir-in's together.

  3. Stir in coconut milk until just combined, don't over-mix!

  4. Dump the mixture onto a floured surface and very gently fold 4 to 5 times until mixture is a nice even texture and...

You have probably seen me post or heard me talk about the Wellness Revelation but maybe you don't really know what it is about. Today we will be talking about what the Wellness Revelation is all about and if you should pick up a copy of your own. 

At the beginning of the year, as I went through Revelation Wellness Instructor training, I also became a facilitator for the Wellness Revelation. The book has not officially been released yet but it will be available starting August 8th! **1 week away**

So, what exactly is the Wellness Revelation??

The Wellness Revelation is a book that contains an 8 week journey through discovering how to be whole spiritually and physically in Christ. Back a few weeks ago, I wrote a post on "3 Things You Need to Know About Drinking Water" and I thought I would piggyback that post with one on sports drink alternatives. 

How many of you consume sports drinks like Gatorade or PowerAde?

Do you know that there is science behind why these drinks were created for exercise? Research shows that for athletes who are participating in physical activity, they should consume 500ml of water 30g of carbohydrates, and 15g of protein every hour of exercise. For endurance athletes performing for more than 2.5 hours, they should increase their carbohydrate intake to 60-90g per hour. Research shows that instead of carb loading, athletes should be consuming carbohydrates during exercise to help regulate their blood sugar and energy levels. This provides the carbohydrates when they are needed and most sports drinks also help replenish the electrolytes that are being lost as well.

So, before you grab for a bottle of Gatorade or PowerAde, I would strongly urge...

Last Saturday we ran our first 5K as a family of 5! I have long dreamed of the day that we would run another race as a family. We would often run with Gideon and then with Gideon and Luther but couldn't manage running with 3 kids with only a double stroller. Initially, Mattie was going to push Luther and Amos and I was going to push Gideon. All of that changed part way through the race...

Let me backup and give you a recap of the morning. Our family set off to participate in the Moxie day 5K after the kids run. After Gideon was not able to run the broad street kids run, he was dying to participate in a kids run. So we showed up early and got him registered. He was excited but quite nervous. He asked me if I would run the kids race with him. I told him yes and Mattie stayed with the younger kids while I set up to run next to Gideon in the kids fun run. Off we went and Gideon had SO much fun running and thoroughly enjoyed the short little kids run. He was SO proud of himself for finishing...
